Baked sweet potato salad recipe
- 2 large sweet potato peeled and cut into chunks
- 3 tablespoon olive oil
- 2 teaspoon dried parsley
- ½ teaspoon salt
- 2½ cup canned black breans rinsed and drained
- 1 cup cucumber diced
- ½ cup white onions diced
- 2 tablespoon parmesan cheese
- 1 tablespoon freshly squeezed lemon juice
Set oven to bake at 400°F
In a bowl, combine sweet potato, 2 tablespoon olive oil, salt, garlic, parmesan cheese, parsley and ginger; mix thoroughly. spread on baking baking tray; roast for about 30 minutes or till its tender
Cut the cucumber, red pepper and onion.
Remove sweet potato from oven and allow to cool for about 15 minutes.
Combine the baked sweet potato, beans,pepper,lemon juice and parsley; Toss gently
Serve hot or cold and sprinkle with dried or fresh parsley if desired.
